Oatmeal Cookie Dough Balls- Guest Post by Delicious Balance

My name is Rachel and I blog over at Delicious Balance. The  focus of my blog  is to help you find  balance in your diet by providing you with mostly healthy recipes along with a few indulgent ones thrown in the mix. My motto in life is “all things in moderation”.  Before I get to the recipe I’m going to share, I thought I would tell you a little bit about myself.
I currently live in Kalamazoo, Michigan with my husband. I work as a registered dietitian at an outpatient cancer center and my husband is a women’s college soccer coach. We are both originally from Michigan but spent the first 2 years of our married life down in Miami, Florida before moving back to the Midwest.
For as long as I can remember, I have enjoyed creating things in the kitchen. It was in college that my journey with healthy eating started. I quickly realized that I had complete control over what I put in my body and how I treated it which led me to pursue a career in nutrition.
Even though I was studying nutrition, finding balance in my diet didn’t come immediately. When my husband and I moved down to Florida, I joined a yoga studio and started the practice of Ashtanga yoga. This practice made me so aware of my body and how what I ate and drank made me feel. For the first time in my life, I could just listen to what my body is telling me it wants.
Here’s what I found it is asking for: small frequent meals, lots of water, mostly plant-based foods, and the occasional treat. I truly feel like I can eat whatever I want and my body will tell me when it’s had enough or when it wants more.

These little balls of energy (literally) are the perfect way to nourish your body and give you sustainable energy so you can power through the day. They come together in minutes, only require a few ingredients, and keep well in the freezer.

Enjoy them on your way out the door for a quick breakfast or snack. They are definitely kid-friendly and would make for a great lunch box treat or after school snack.


OATMEAL COOKIE DOUGH BALLS
Makes 12 balls
1/2 cup rolled oats
10 Medjool dates, pitted
1/4 cup almonds
1/4 teaspoon cinnamon
1/4 teaspoon vanilla
Pinch of salt
1. Add all ingredients to a food processor. Pulse until combined.
2. Roll tablespoons of dough into balls and place them on a lined cookie sheet.
3. Place the cookie sheet in the freezer for 20 minutes. Place balls in a bag for storage. I stored them in the freezer so they hold their shape.
4. Enjoy when a craving for dessert hits :)
