HealthIER Pancakes


As a mother I am always trying to figure out ways to add healthy goodness into our foods. How can I trick the girls? How can I make it still taste good? This morning I feel accomplished.

Our daughters love pancakes. It is kind of like a special treat on the weekends when daddy is not working. Lately the thought of pancakes with not really any healthy goodness makes me cringe. So why not add some healthy goodness into them right?

Here is what I added and subtracted. I added our flax seeds by grounding them. I just used my coffee bean grinder; works great! I added it to the pancake mix. I then subtracted the water that it calls for. Instead I added coconut water. next....mix...mix...mix!

Don't feel threatened; the batter will smell a little on the funky side. But they are oh so delicious.  Our daughters loved them so much they begged for more. Lets just say after our daughters demolished them, my husband and I were left with one each.  I have accomplished a healthier pancake.

I found your blog on The Collective and started following on google friend connect. I recently went on an adventure in healthy pancake making too. I used a Multigrain mix from Trader Joe's and replaced the egg with flaxseed. No coconut water, though. The nutty flavor from the flax seed was nice!
