Coconut Flax Seed Pancakes
How I get my Daughters to eat a healthier version of pancakes.
As a mother I have those typical "hurry...rush rush...on the go" mornings. Maybe more then I would like to admit. Just when I feel as if I have fallen into a perfect routine in the mornings...boom both traffic routes to my Daughters school are now under construction. I mean really? Do they have to do this to me? Or us? But then again this is Michigan and we joke that we have 5 seasons and the fifth season is quote on quote Orange cones. Which seems to end once snow falls and the workers can no longer work.
Anyways, my Daughters favorite breakfast is pancakes. Whenever I toss the boxed mix into my cart for the on the go mornings I cringe. I try to buy the healthiest boxed version, but I mean seriously anything with a boxed life scares me. But that is kind of hard to get away from theses days unless you live on a farm. Which is my dream. That's when I started pondering how I could make them healthier.
That is when I came up with my healthier version. I have to admit it scared my Daughters at first, but they ended up loving them. Now this is how I make our boxed pancakes. Or even homemade pancakes. It;s really all about substituting and adding.
The Recipe
Boxed pancake mix (or homemade)
Coconut water (instead of water)
Coconut milk (instead of milk)
Grind ed flax seeds ( add into the mix)
Eggs (if recipe calls for them)
